How to make Paleo Nachos


Ok, the Football Playoff's are here.  So consider making some fresh salsa, and guacamole.  And now give this a try:

Healthy paleo nachos loaded with spicy chicken or beef.  Yes, these will go over real well!!  This recipe was inspired from a combination of Lexis Clean Kitchen and Jamie Oliver.

 
Instructions for Sweet Potato Chips
  1. The Nachos - from 2 large sweet potatoes
  2. Preheat oven to 375 and line baking sheet with foil
  3. Slice sweet potatoes thin, using mandolin
  4. Lightly oil baking sheet, lay sweet potatoes down, and bake until crispy
  5. Remove, let cool, and place on plate
  6. Dash Himalayan sea salt
 Spicy Chipotle Chicken
  1. -2 organic chicken breasts
  2. -1 tsp extra-virgin olive oil
  3. -1/4 tsp chili powder
  4. -1/4 tsp cayenne pepper
  5. -1/4 tsp garlic powder
  6. -1/4 tsp onion powder

Cut chicken into bite size pieces

  • Combine spices and coat chicken with the spice mix
  • In a skillet, heat oil and add chicken and cook until fully cooked
Guacamole
  1.  ½ a small red onion
  2. 1-2 fresh red chillies
  3. 3 ripe avocados
  4. 1 bunch of fresh coriander
  5. 6 ripe cherry tomatoes
  6. 2 limes
  7. extra virgin olive oil

Deseed the chilli, then roughly chop it all on a large board and then add the lime juice and 1Tbsp of oil

Homemade Salsa

  1. 1 23 oz. jar diced tomatoes
  2. 1 4 oz. can green chiles
  3. 1 garlic clove
  4. 1 tbsp vinegar
  5. 2 tbsp tomato paste
  6. 2 tbsp chopped white onion
  7. 1/2 cup grape tomatoes
  8. Himalayan sea salt, to taste
  9. Red pepper flakes, to taste
  10. Garnish with diced red onion

Then blend/pulse to your thickness and liking.

And again, feel free to add jalapeno peppers or any other desired topping as well as switch up the protein.
